Tips for Making the Best Matcha Green Tea Ice Cream
- Use culinary grade matcha! You definitely want high quality matcha, but there’s no reason to spring for the more expensive ceremonial grade matcha for this recipe. I use this matcha in all my recipes. It’s not super expensive, but it’s a great quality.
- Make sure all your ingredients are cold! This works best with very cold ingredients – even the canned condensed milk. Throw everything in the refrigerator overnight for best results, or at least an hour to chill properly.
- To make the whipping cream extra smooth and creamy, use cold heavy cream. You can even chill the whisk, beaters, and bowl for approximately 30 minutes to make the whole process faster.
- Make sure you follow the directions to mix up the matcha powder before adding the other ingredients. This will make sure your ice cream is free of any lumps and is silky smooth.
- While I prefer using an electric mixer to whip the heavy whipping cream, you can also do it manually. And if you’re looking to make whipped cream without a mixer or a whisk, here’s a great video tutorial.

Matcha Green Tea Ice Cream
This no-cook, no machine recipe is quick and easy to make. The hardest part is waiting for it to freeze up so you can dig in! Make sure you chill the whipping cream and condensed milk and all the utensils you'll be using!
Ingredients
- 4 tbsp. of matcha powder
- 2 cups of heavy cream (well chilled)
- 1 can of sweetened condensed milk (14 oz.) (well chilled)
- ½ cup of milk (warmed)
- 1/2 tsp pure vanilla extract
Instructions
- In a medium bowl, mix the green tea matcha powder with ½ cup of warm milk and lightly beat with a whisk until all the lumps are gone. Set it aside and let it cool down for 15 minutes.
- Add the chilled sweetened condensed milk to the green tea and milk mixture. Gently whisk together until all the ingredients are fully combined. Set aside.
- Pour the chilled whipping cream into a large chilled bowl. Add vanilla. Beat mixture until well whipped with an electric mixer for 3-5 minutes until smooth and fluffy. If you don't have a mixer, you can whip with a whisk and a strong arm.
- When cream is beaten, gently fold it into the matcha mixture. Don't overmix, just fold until the matcha mixture is well incorporated.
- Transfer the mixture to a container with a lid and freeze for 5-6 hours.
- When ready to serve, remove from the freezer for about 10 minutes to let it soften a bit before scooping into bowls.
Notes
Serve as is or top with whatever you like! I love these toppings: shredded dark chocolate, shredded coconut, shaved almonds, or bananas.
