Matcha energy balls are pretty much the perfect snack. These tasty matcha balls have a satisfying combination of protein, good carbs, healthy fats, and are high in fiber.


– Pistachios – Medjool dates – Coconut flour – Vanilla extract – Almond butter – Matcha powder – Coconut – Vanilla protein powder

How to Make Matcha Energy Balls

Add the pistachios to the food processor and pulse a few times until they’re broken down into small pieces.

Step 1: Chop the Pistachios

Step 2: Add in Ingredients and Process

After roughly chopping the pistachios, add the dates, almond meal, vanilla, almond butter, matcha, protein powder if desired, and half of the coconut.

Step 3: Form into Balls

Taking about a tablespoon of the mixture at a time, roll into a ball, then roll in shredded coconut. Place on a baking sheet.
